Jaisalmer vegetarian food guide: finding Rajasthani vegetarian food without menu surprises

Incredible India lists dal baati churma, gatte ki sabzi, kadhi and ker sangri as Jaisalmer staples, and Laal Maas on the same menus. Here are the names to ask for and the questions that avoid surprises.

Rajasthani food leans vegetarian, which helps. The risk in Jaisalmer is not finding a vegetarian dish. It is not knowing what a kitchen does around it, because the same menus carry meat dishes.

1. What Incredible India lists

  • Meals: Dal Baati Choorma, Gatte ki Sabzi, Kadhi (including a Kadhi Chawal), and Ker Sangri, which it pairs with bajre ki roti.
  • Snacks: Mirchi Bhajiya and Pyaz ki Kachori, plus Ghewar and jalebi for sweets.
  • Drinks: Kesariya Thandai and Makhania Lassi.
  • Not vegetarian: Rajasthani Laal Maas, a goat or mutton curry. It says these dishes are available at most local eateries.

Incredible India also describes ker sangri as made from dried desert berries and beans, and calls it extremely popular among vegetarians.

2. Menu phrases to use

  • "Pure veg, no egg, no meat in the kitchen?" Ask this first. A vegetarian dish and a vegetarian kitchen are two different things.
  • "Is this cooked in a separate pan from the non-veg?"
  • "What is the gravy made with?" Ask about stock or any non-veg base, if that matters to you.
  • "Is there onion and garlic in this?" if you avoid either. Do not assume.
  • "Can I have it with bajra roti?" if you want the ker sangri pairing.

3. Easy places to eat well

Incredible India points to rooftop restaurants with a view of the skyline for an authentic Rajasthani meal. We have not named any restaurant, because we could not verify one against an official listing. Ask your stay, and check the menu before you sit.

4. For a desert camp dinner

Tell the camp your diet when you book, not on the night. Ask for the menu in writing.

5. What we could not confirm

No official page we found says which dishes use ghee, onion or garlic in a given kitchen, or which eateries are fully vegetarian. The questions above are how to find out.
