Ranthambore vegetarian food guide: Rajasthani vegetarian meals without menu surprises

Rajasthani food is traditionally vegetarian, but official pages also list rich meat dishes from the same kitchens. Here are the vegetarian dishes the sources name, the phrases to use at the table, and what to check about ghee, onion and garlic.

Rajasthani food is mostly good news for vegetarians, with one catch. The same official pages that praise the vegetarian dishes also list red meat curries as classics. So a "Rajasthani thali" menu can mix both. This guide gives you the dishes to ask for, what is in them, and the exact words to use. We name no restaurants, because we could not verify any.

1. Vegetarian dishes the official pages name

  • Dal baati churma: lentils, baked wheat balls (baati) and sweet crushed wheat (churma), served with red chilli and a spicy garlic chutney (Rajasthan Tourism).
  • Gatte ki sabzi: gram flour dumplings in a tart, yoghurt-based gravy, eaten with roti or rice (Incredible India).
  • Ker sangri: a tangy dish of dried desert berries and beans. Incredible India says it goes well with bajra roti.
  • Rajasthan Tourism's cuisine page also lists gatte ki khichdi, shahi gatte, kachoris, mirchi bada and ghevar.

2. The menu catch

  • The same Rajasthan Tourism page lists lal maas and safed maas, which are meat curries, as traditional dishes.
  • Do not assume a "Rajasthani" menu is all vegetarian. Look for the vegetarian mark or ask.

3. Phrases for the table

  • "Pure veg kitchen hai?" Ask whether the whole kitchen is vegetarian.
  • "Bina pyaaz lehsun?" For no onion and garlic. Remember the dal baati churma comes with a garlic chutney.
  • "Isme meat ya egg ka stock hai?" For gravies.
  • "Ghee ya oil?" If it matters to you, ask what the baati and sabzi are cooked in.

4. Ingredients to verify

  • Ghee: central to baati and churma.
  • Dairy: yoghurt in gatte ki sabzi, milk and ghee in ghevar.
  • Onion and garlic in the gravy and chutney.
  • Sweetness: churma is sweet, so it will show up on a thali.

5. Meals around the safari

Safari windows are 7:00 AM to 10:30 AM and 2:30 PM to 6:00 PM, according to Incredible India. That pushes breakfast and lunch around. Ask your hotel about early or packed breakfast and what it can serve when you return. Some hotels sell a room plan with meals. RTDC's Castle Jhoomar Baori, for example, lists a MAP plan with breakfast and either lunch or dinner. Check what your own plan includes.

6. What we could not verify

  • Restaurant names, quality or prices near the park.
  • Whether a given hotel runs a fully vegetarian kitchen.
  • Jain or no-onion-garlic availability at any specific place.
